Long ago, people would smoke meats and fish wrapped in large leaves over the coals of an open fire, such as the Indians. Yet, in recent times and with the advent of modern appliances such as stoves and grills, the smoking of foods has become a thing of the past for many, but not for all. In other countries across the world, smoking is still a popular way of cooking and preparing meats, fish and poultry of all kinds. There are many modern smokers now available as well, and they are fueled by different means. Electric, charcoal and gas smokers all have beneficial qualities, but the gas smoker proves to be the most efficient of the three.</p>
<p>Components Of The Gas Smoker</p>
<p>Gas smokers are often used by smoking enthusiasts for their ease of use and their dependability. They can easily be taken places and are very mobile. The only drawback is that one must take the gas tank as well, which can at times become cumbersome, depending on the size of the smoker. As far as cooking temperatures, the gas smoker offers a greater range for the person who is cooking. Problems can occur if someone forgets to buy the gas in order to fuel the smoker, and you are camping out in the woods!  Yet, gas is readily available in most locations and should not be difficult to find no matter where you are.</p>
<p>Many gas smokers come built with a cast iron smoking box, which helps to insulate the wood and coals and prevent any danger in the smoker. There are a number of adjustable dampers as well, to ensure proper ventilation and several chrome-plated cooking grids that are manufactured in the oven style. A full size door opening is often available, depending on the size of the gas smoker, as well as a heavy steel cooking cabinet. These smokers are very sturdy products when you buy them from the manufacturer. Many people like to build their own smokers to meet their individual needs, but not everyone is capable of this. Unless someone is skilled in building and carpentry, buying the pre-made brands is advisable. No matter what you like to cook in a smoker, a gas smoker is a good choice to make.</p>

			<content:encoded><![CDATA[<p>There is nothing better than waking up to the smell of smoked sausage being cooked in a cast iron pan. For the individual who enjoys smoked sausage taking the time to learn about sausage smokers will be beneficial.</p>
<p>The process of making and smoking sausage is not difficult. In less than a day, most people can become efficient enough to make their own. Sausage smokers come in many sizes and types. For most people, a small electric smoker will meet the needs of one family.</p>
<p>Before one can smoke the sausage there are a few steps to follow. First, the ground meat needs to be mixed with a sausage mix. One can buy the seasonings pre mixed from a package, or learn to make the seasoning from ones own recipe. Mix the seasoning with the ground meat and put it in the refrigerator overnight.</p>
<p>Then take a sausage stuffer, found at many stores in the dehydrator section and pack the sausage mix into sausage casings. Sausage casings can be bought at many stores or over the internet. Once all of those steps are followed, the sausage is now ready to be smoked in the sausage smoker. Most sausages need to be smoked about twelve hours.</p>
<p>Proper Care For Sausage Smokers And Smoked Sausage</p>
<p>When the smoking process of about twelve hours has been finished, it&#039;s time to decide what to do with the sausage. Sausage can be stored in a refrigerator for about two weeks and then it should be considered bad. Sausage can be left in a freezer over a year. When ready to eat, just take it out of the freezer and let it thaw.</p>
<p>For the smoker, proper care will make it last for many years. After each use, unplug the smoker from the outlet. Sausage smokers can be wiped down with a washcloth rinsed out with warm water. Be careful when handling the unit.</p>
<p>Do not overload sausage smokers because the extra meat in the unit can make it difficult to clean the inside of the smoker. While cleaning the inside, be gentle around the components and don&#039;t use a wash cloth filled with water. If one tries to use the smoker and water is still not dried, one can either break the smoker or trip a fuse in the house.</p>
<p>Sausage smokers are fun and easy to use. They can really add a new dimension to ones cooking. Best of all is that homemade sausage is cheaper and tastes better than many store bought brands.</p>

There are many types of smokers available, such as propane, gas, and electric, yet a cold smoker is a bit more uncommon than other varieties.</p>
<p>How To Cook With A Cold Smoker</p>
<p>When using the cold-smoker method of smoking fish and other meats, the temperature one uses is far lower than the hot-smoker method. Fish is most often used with this type of smoking, and should be frozen prior to the process in order to kill any susceptible parasites within the fish. The fish must stay in a brine solution for a longer period of time as well, and the cooking time is much longer than with the hot-smoker method. Often, a cold smoker cooks very slowly, from one to five days, depending on the amount of fish that is in the smoker itself. Different kinds of fish can be placed within the cold smoker, most often salmon or cod. Herring can also be used, as well as eels. This is a popular item in European countries, but generally not as well accepted in the U.S.</p>
<p>A homemade cold smoker can be built using a refrigerator, yet it is usually more time consuming than it is worth, and there are many quality brands available on the market. When cooking fish in this way, the fish can last for many months in the refrigerator, whereas using the hot smoker method, the fish spoil in just a few days. If one desires to preserve their meats or fish, a cold smoker is the better option. Wood chips or powder is used in the cold smoker as well. Choosing between a cold or hot smoker is solely based on individual preference and needs, yet both should provide delicious and satisfactory results to the avid meat or fish lover for years to come.</p>
